Yogurt Waffles

Adapted from Everyday Food

3/4 cup AP flour
1/2 cup whole-wheat flour
1/2 cup rolled oats (not quick-cooking)
3/4 tsp salt
2 tsps baking powder
1 tsp baking soda
1/4 cup packed brown sugar
3 Tlb melted, unsalted butter
1 tsp vanilla extract
3 large eggs
1 1/2 cup plain, low-fat yogurt (I used Greek)

1. In a large bowl, whisk together flours, oats, salt, baking powder, and baking soda. In another bowl, whisk together brown sugar, butter, vanilla, eggs, and yogurt until smooth. Stir egg mixture into flour mixture and mix well to combine. Let batter set 15 minutes.

2. Heat waffle iron according to iron's instructions. Spray with cooking spray. Cooking according to iron's instructions. Transfer to wire rack set on a baking sheet and place in a low-temperature ove to keep warm.
